BBQ Meatloaf

Prep Time: 15 minutes
Bake Time: 55-65 minutes
Serves: 4 (barely, better double it for more)
1 pound ground bison (buffalo) or ground beef
1/2 onion, minced
1 clove garlic, minced
2 tablespoons fresh parsley, minced
2 tablespoons beef seasoning
1/4 cup parmesan, freshly grated
1/2 cup Sweet Baby Ray's Original BBQ sauce (or your favorite)
1 egg, beaten
1/4 cup milk
2 1/2 cups crusty bread, torn into small pieces (insides only, discard crust)
Salt/Pepper to taste
Preheat oven to 350 degrees.

Preheat oven to 350 degrees.

In a large bowl, combine bison, onion, garlic, parsley, beef seasoning, parmesan, and BBQ sauce. Throw a dash of salt & pepper in there (more pepper than salt). Using your hands, squish everything together.
In a small bowl, combine egg and milk. Pour half of egg/milk mixture into bison mixture, then add bread crumbs. Using your hands, squish everything together.

Only add rest of milk & egg if bison mixture looks a bit dry. You want it to hold together but still look somewhat moist.
Pat into a roundish loaf and place onto foil-lined baking sheet with nonstick spray. Drizzle a little bit more BBQ sauce over top of meatloaf.
Bake in preheated oven uncovered for 55-65 minutes or until there is NO PINK in the thickest part.

Once done, remove from oven and cover with foil. Let it sit 10-15 minutes before serving. Slice and serve with mashed potatoes, green beans, asparagus, whatever you like! ENJOY!!!
