Mashed 'Taters
Prep Time: 5 minutes
Cook Time: 15-20 minutes
Serves: 6
12-14 medium/large red potatoes, scrubbed and cut into thirds, skins left on
1/2 stick butter + 2 tablespoons more
1/4 cup sour cream
1 teaspoon garlic powder
2 tablespoons fresh parsley, minced
1/4 cup half n half
Salt & Pepper, to taste
Put potatoes in a large pot and fill with water (fill about 2 inches above tops of potatoes). Turn heat to high and bring to a boil. Boil 15-20 minutes or until potatoes are completely soft (fork goes through easily). Drain potatoes.
Preheat oven to 200 degrees.

Toss 'em into kitchen-aide bowl. Add 1/2 stick butter, sour cream, garlic powder, parsley, and half n half. Give 'em a real good dash of salt & pepper. Mix them on medium-high until real smooth with no chunks.
(I usually stop and stir with a spatula once to get all the 'taters at the bottom mixed in. Then taste it to see if it needs more salt 'n pepper.)
Put them into oven safe dish. Dab remaining 2 tablespoons butter over the top and cover with lid.
Put in oven until butter is melted and you are ready to serve dinner. (I like getting these out of the way so I can finish the rest of dinner). Enjoy! I know you definitely will!
