Dirty Green Beans

Prep Time: 5 minutes
Cook Time: 20 minutes
Serves: 4-5
1 pound fresh green beans, rinsed and ends snipped off
3 slices bacon, diced into small pieces
1 cup red onion, diced
1 tablespoon extra virgin olive oil
2 tablespoons unsalted butter
Dash salt & pepper
Cook bacon in frying pan over medium-high heat until crispy, about 7-8 minutes. Drain and set bacon aside in medium bowl. Put same frying pan back on heat and add onions and olive oil. Sauté until soft and golden, 4-6 minutes. Toss 'em right over bacon. Set aside.
Using a steamer or colander w/lid over pot (make sure there is water in the bottom!!!) steam green beans just until soft, about 10 minutes. Drain. Throw butter over green beans and stir around. Place on serving platter. Add dash of salt & pepper. Toss bacon and onion over top of green beans. Serve immediately.
