Spinach & Sun Dried Tomato Mini Pizzas
Serves: 2 people
Prep Time: 5-10 minutes
Bake Time: 15 minutes
4-6 greek style round flatbreads
1 cup sun dried tomatoes (not oil packed)
1-2 cups fresh baby spinach
8 fresh white mushrooms, thinly sliced
4 heaping tablespoons purchased basil pesto
4-5 tablespoons feta cheese with mediterranean herbs
2-4 tablespoons grated parmesan cheese
Preheat oven to 375 degrees.
Line 2 baking sheets with aluminum foil.
Spread pesto onto each flatbread. Layer spinach, mushrooms, & sun dried tomatoes over top of each flatbread. Crumble feta cheese and sprinkle parmesan over top.
Bake 15 minutes. Using pizza cutter, cut into quarters and serve immediately. Enjoy!
