Meatloaf
Serves: 4
Prep time: 20 minutes
Bake time: 50-70 minutes
Stand time: 10 minutes
1 pound lean organic, free-range ground beef (if possible)
2 eggs, beaten
3/4 cup milk
2/3 cup bread crumbs (regular, no seasoning)
1 tablespoon dried parsley
1 teaspoon salt
1/8 teaspoon black pepper
1/4 teaspoon dried sage
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1/2 cup chopped onion
Topping:
1/4 cup ketchup
2 tablespoons brown sugar
1 teaspoon ground mustard
Preheat oven to 350 degrees.
In a medium-large bowl combine, eggs, milk, parsley, salt, pepper, sage, basil, oregano, & chopped onion. Add bread crumbs and ground beef and mix well. (Go on, don't be afraid to get your hands dirty; you will be able to combine the ingredients best when you use your hands. :) You may need to add some more breadcrumbs to the mixture so it is not runny. I add until the meat holds together well. Spoon and pat down mixture into a greased 8x4x2 inch ceramic loaf pan. Bake in 350 oven for 50-70 minutes (every oven cooks differently).
When it is done, spoon off fat (there shouldn't be very much) and discard. In small bowl combine ketchup, brown sugar, & ground mustard. Spoon mixture over top of meatloaf and put back in the oven for 10 more minutes. Take out of oven and let stand for 10 minutes before serving. Enjoy!
Notes from the cook: * If you have a meat thermometer, when it is done it will register 160 degrees F. I just eyeball it. If it looks done, its done. I also make a small cut into the middle before putting ketchup mixture to make sure. :)
*This goes great with my roasted red potatoes with rosemary, or steamed green beens or asparagus. That white clump you see in picture? Not mashed potatoes. That is cauliflower, which I usually HATE. But even I ate it this time - I steamed fresh cauliflower for 8-10 minutes, drained it, then mashed it with a LITTLE butter, salt & pepper for a healthy alternative to starchy fatty potatoes. :) Or, just serve it with a nice salad full of fresh veggies.
*One more thing: If you have access to organic, free range meat, BUY IT!!!
