Roasted Red Potatoes with Rosemary

Bake time: 45-50 minutes
6 cups baby red potatoes
2 tablespoons extra virgin olive oil
2 tablespoons fresh rosemary, minced
1 teaspoon salt
1/2 teaspoon fresh ground pepper
1 garlic clove, minced OR
1 teaspoon garlic powder
Preheat oven to 400 degrees.
Wash baby potatoes and cut in half, then into thirds.
In a large bowl, combine potatoes, olive oil, rosemary, salt, pepper, & garlic. Give it a good stir and pour into greased baking dish. Cover & bake for 45-50 minutes or until potatoes are soft & look slightly browned.

NOTE: Sometimes I use this seasoning blend (can be found at Costco) in this recipe replacing the salt & pepper. I modify the recipe by using 2 tablespoons of seasoning and reducing the salt and pepper to taste.
This seasoning blend is great for chicken & cooked or grilled veggies. It is an "everything" seasoning, and I recommend picking some up the next time you are at Costco.
