Chicken Cobb Salad

Chicken Cobb Salad

Serves: 2
Prep time: 15 minutes
Cook time: 15 minutes (eggs)


4 chicken tenders, cooked and sliced
2 boiled eggs, sliced
1/2 head romaine or enough mixed salad greens to fill 2 plates :)
1/2 bell pepper, sliced
1 avocado, sliced
Handful of cherry tomatoes, cut in half
6 baby carrots, cut in chunks
2 tablespoons feta cheese
2 thick slice of cheddar cheese, cut in small cubes


Fill plate with romaine or mixed greens.  Add all veggies, cheese, & egg  on top of greens, splitting evenly between 2 plates.  Layer chicken on top, add your favorite salad dressing, & enjoy!

NOTE: Ranch dressing is my favorite with this one! Also - leftover chicken is a good option, but if I don't have any cooked already, I throw it in a frying pan with olive oil and a little montreal steak seasoning sprinkled on each side.  Once it is done - let it cool a few minutes, then toss on salad.
