Chicken & Biscuits

Cook Time: 25 minutes
1 package refrigerated biscuits
1 recipe My Favorite Chicken Gravy
7-8 boneless, skinless chicken breasts, thawed and cut into chunks
1 tablespoon olive oil
1 1/2 cups sliced carrots
1/2 cup sliced celery
1 cup frozen peas
Preheat oven to 350 degrees.
In a large saucepan make gravy according to my directions. Set on back burner on low, stirring every once in a while. Meanwhile, heat olive oil in frying pan over medium heat. Add chicken and cook until done, 6-8 minutes. Add to gravy.
If you have a steamer, steam carrots and celery until fork goes through easily, about 5-6 minutes. If you do not have a steamer, heat one cup water in frying pan over medium-high heat, add carrots and celery, cover, and "steam" until done. Add peas the last 3 minutes. Remove from heat RIGHT when fork goes through easily and make sure to drain well, then add to gravy mixture.
Place biscuits on ungreased baking sheet and cook according to package directions. Once done, let cool 5 minutes. Cut biscuits in half and spoon gravy over. Enjoy!
* I buy my biscuits from Trader Joe's. They are a little healthier than a regular grocery store. But it is up to you! Biscuits and gravy can only be so healthy. :)
