Turkey Focaccia Sandwich w/ Roasted Red Pepper Mayo

Cook Time: 5-10 minutes
2 Focaccia style sandwich rolls, cut in half
1 cup roasted red bell peppers, drained well
1 cup mayo
1/4 cup red onion, sliced very thin
1 cup baby arugula
6 slices deli turkey meat
2 slices deli sliced havarti cheese
Using blender or food processor, blend mayo & red bell peppers until smooth. Give a quick taste; if it tastes too much like mayo, blend a few more bell peppers into mixture. Will be slightly runny, but that is okay.
Under oven broiler, toast sandwich rolls for 2-3 minutes until slightly toasty. Take out of oven and spread red pepper mayo thinly on all 4 sandwich rolls. Place havarti cheese on one side of each roll. Place 3 pieces of turkey deli meat on each roll on the side with no cheese on it. Sprinkle red onion on top of turkey meat. Place back under broiler (on baking tray) for 5 minutes or until cheese is melted. Remove from oven and put arugula on each sandwich, close, and cut in half. Eat right away before it gets cold!
