Strawberry Topping

Prep time: 10 minutes
4 cups fresh, ripe strawberries, cut in chunks
1 1/2 tablespoons honey
1/4 tsp. pure vanilla extract
1/2 tsp. fresh lemon juice
Put cut strawberries in shallow dish. Add honey, vanilla, & lemon juice over top of strawberries. Now here comes the fun part: SMASH strawberries with either the bottom of a drinking cup (which is what I use; it is much more fun) or slightly puree with food processor or blender, until it is slightly syrupy but strawberries are still chunky. Throw over ice cream, pancakes, waffles, or crepes!
NOTE: I always use local honey purchased at the Farmer's Market or a local farm I love to go to in the summer (Fox Berry Farm, Puyallup, WA). When you buy it local, it can help with allergies in the spring & summer!
