Spicy Beef Veggie Bowls
Serves: 2-4 people
Prep Time: 10-15 minutes
Cooking Time: 30-35 minutes
1/2 pound grass fed ground beef
1/2 onion, diced
1 large green bell pepper, diced
1/2 yellow bell pepper, diced
1 14.5 ounce can unsalted diced tomatoes with green chilies, undrained
2 ears fresh corn on the cob, peeled
1 tablespoon extra virgin olive oil
1 teaspoon ground cumin
1 tablespoon worcestershire sauce
1 teaspoon balsamic vinegar
1/4 teaspoon ground pepper
Salt to taste
Handful of fresh cilantro, washed and chopped roughly
Sour cream
Tortilla chips
Wrap corn on the cob completely in foil. Grill corn over medium-high heat for 15 minute. Set aside.
In a large frying pan heat olive oil over medium heat. Add onions and bell peppers. Sauté 1-2 minutes then add ground beef. Cook 3-4 minutes then add diced tomatoes. Add cumin, worcestershire sauce, balsamic vinegar, salt, & pepper. Give it a good stir. Turn heat to low and simmer for 10-15 minutes, stirring every once in a while. Cut corn off of cob and add to beef mixture.
Spoon into bowls, adding a dollop of sour cream & cilantro on top. Serve with tortilla chips.
