1 pound ground buffalo or beef
3/4 onion, diced
1 green bell pepper, diced
2 cloves garlic, minced
1 6 ounce can tomato paste
1 tablespoon beef base
1/2-1 cup warm water
1/4 cup barbecue sauce
1 teaspoon sugar or honey
1/2 teaspoon ground mustard
Salt/Pepper to taste

In a medium bowl, mix tomato paste with beef base, barbecue sauce, sugar/honey, and 1/2 cup warm water. Add more water until consistency is like tomato sauce, not too thick or runny. Set aside.
In a large dutch oven over high heat, add ground buffalo or beef, onions, bell pepper, and garlic. Add a good dash of salt and pepper and ground mustard. Sauté until meat is thoroughly cooked and no pink remains, about 8-10 minutes.
Turn heat to medium-low and add tomato paste mixture. Stir well and cover. Simmer for 15-20 minutes on low heat. Taste and add more salt/pepper if needed.
Toast buns before spooning beef mixture inside and sprinkle shredded cheese over top of meat.
