4 cups homemade beef or chicken bone broth
4 cups filtered water
1 tablespoon chicken base (grain/gluten free)
1 cup cooked chicken (leftover works great!)
1 1/2 cups sweet potatoes, peeled and chopped into small chunks
1 1/2 cups carrots, peeled and chopped into small chunks
2 tablespoons extra virgin olive oil
1 onion, diced
1 shallot, minced
1 tablespoon Italian seasoning
1 bay leaf
Salt/Pepper to taste
Steam sweet potatoes and carrots until tender, 5-6 minutes. Set aside.
In dutch oven or soup pot, heat olive oil over medium-high heat. Add onions and shallots, sautéing 5-6 minutes or until golden. Add bone broth, water, and chicken base. Bring to a rolling boil then reduce heat to a low/simmer. Add chicken, sweet potatoes, Italian seasoning, and bay leaf. Add a generous amount of salt and pepper.
Let soup simmer 10-15 minutes, then enjoy!
Note from Gabbi: I also added a small amount of Kirkland Signature no-salt seasoning to enhance the flavor. (purchased from Costco). It does contain red bell pepper, tomato granules, and cayenne, which could bother some people. It doesn't seem to have a negative effect on myself, and I cannot eat fresh bell pepper or tomatoes.
