Simple Berry Syrup
Serves: 2
Prep time: zero
Cook time: 12 minutes
1 cup frozen mixed berries
1/2 cup water
1 tablespoon honey
Additional 1 tablespoon water
1/2 tablespoon cornstarch
Put frozen berries & water in saucepan over high heat and bring to a boil. Whisk together the tablespoon of water & cornstarch in a small bowl or cup, making sure there are NO lumps. Once berry mixture comes to a boil, add cornstarch mixture, honey, & boil for 1 minute. Take off of heat and let sit for 5- 10 minutes, stirring a couple times. Enjoy!
NOTE: I like the frozen berry medley from Trader Joe's with raspberries, blueberries, & blackberries. We frequently use this over vanilla ice cream, french toast, or pancakes. I have also thrown canned or frozen peaches in this as well, as you can see in the picture. So yummy!
If you don't have any cornstarch on hand - use 1 tablespoon water and 1 tablespoon flour; follow same directions above.
