Scalloped Potatoes
Serves: 4
Prep Time: 25 minutes
Bake Time: 1 hour and 1/2
4 cups russet potatoes, peeled and sliced very thin
1/2 cup onion, minced
1/8 cup butter
1/8 cup all purpose flour
1/4 teaspoon salt
1/8 teaspoon black pepper
1 1/4 cups milk
1 cup Tillamook sharp white cheddar
1 cup Tillamook sharp cheddar
Additional handful of both cheeses for sprinkling :)
1/4 teaspoon dried parsley
Preheat oven to 350 degrees. Spray a 2 1/2 quart glass baking dish with nonstick spray. Layer half the potatoes neatly in the bottom of the baking dish; set aside.
For sauce, melt butter in saucepan over medium heat. Add onion and cook until soft, 4-5 minutes. Using a whisk, stir in flour. Pour milk slowly in, whisking the whole time. Add both white and cheddar cheeses. Stir well. Add salt and pepper. Continue whisking until smooth and sauce begins to thicken. Stir until mixture is thick and bubbly, then remove from heat.
Pour half the sauce over already layered potatoes in baking dish. Layer the remaining potatoes, then pour the rest of the sauce over everything. Sprinkle with a handful of each cheese over top & finish with sprinkle of parsley. Cover with foil and bake for 50 minutes. Uncover and bake an additional 25-30 minutes or until potato is tender. Let stand 10 minutes before serving. Enjoy!
