Rainbow Chard w/ Feta
Serves: 4 people (as side dish)
Prep Time: 5 minutes
Cook Time: 10 minutes
2 large handfuls rainbow chard, leaves & stems separated and chopped (or you can buy pre-cut at Trader Joe's like me to make life easier)
1/2 onion, diced
1 small garlic clove, minced
2-3 tablespoons feta cheese w/ mediterranean herbs
1 small lemon wedge
Salt/ Pepper to taste
2 tablespoons extra virgin olive oil
Heat olive oil in large frying pan over medium heat. Add onion & garlic; sauté just until soft, about 4-5 minutes. Add rainbow chard, filling frying pan (it will cook down quite a bit). Sauté just until chard is soft, 5-10 minutes. Squeeze lemon juice over chard; toss gently. Add salt & pepper to taste; sprinkle feta cheese over chard; toss gently then serve immediately.
