Pesto Zucchini "Noodles"
Serves: 2-3 people
Prep Time: 30 minutes
Cook Time: 10 minutes
4 medium zucchini, rinsed & ends chopped
Dash salt
1/4 cup basil pesto, more or less to taste
1/2 cup sun dried tomatoes, NOT oil packed, roughly chopped
1/2 red onion, diced
1 tablespoon extra virgin olive oil
Pepper, to taste
Parmesan cheese, for sprinkling (optional)
Using a vegetable peeler, grate zucchini into thin strips. (I grated just until I hit the seedy part then stopped on each zucchini). They should somewhat resemble wide noodles. Put zucchini strips into small colander and sprinkle lightly with salt. Toss gently using your hands then let it sit for 15-30 minutes.
Fill a large pot with water. Bring to a boil. Submerge zucchini (I kept in colander) and boil for 1 minute. Remove from water and rinse with cold water. Drain well.
Heat olive oil in frying pan over medium heat. Add onion and sauté for 4-6 minutes, just until soft. Add sun dried tomatoes; sauté another 2-3 minutes. Add zucchini strips and toss lightly. Pour pesto over mixture and continue tossing gently until well incorporated. Add a dash of salt & parmesan cheese, if desired. Serve immediately.
