Pesto Alfredo
1 box whole wheat penne
1 large chicken breast, cooked and cut into strips
1 tablespoon extra virgin olive oil
1 clove garlic, minced
2 cups fresh baby spinach
1 cup sun dried tomatoes; NOT oil packed
16.9 ounce jar purchased Alfredo sauce
1/4 cup basil pesto
2 tablespoons Parmesan cheese, grated
Fresh ground pepper, to taste
Cook whole wheat penne according to package directions. Drain and set aside.
Pour alfredo sauce and pesto into medium size saucepan and heat on medium low. Sprinkle a little pepper to taste; stir.
Heat olive oil in frying pan over medium heat. Add garlic, cooking for 1-2 minutes, then add sun dried tomatoes, cooking 1 more minute and then add spinach. Toss just until spinach wilts and remove from heat and set aside.
In a LARGE bowl toss penne (you may not need to use all of it), spinach mixture, chicken, and Alfredo sauce. Stir well then sprinkle Parmesan cheese over top. Serve right away.
* For the chicken breast - I just drizzled a little olive oil over it, sprinkled a generous amount of salt & pepper on both sides, then sent it out for my husband to grill. Delicious!
