Nachos

Serves: 2-3
Prep time: 20 minutes
Bake time: 25 minutes
1/2 bag tortilla chips
1 cup cooked & shredded chicken or
1 cup cooked & shredded carne asada
2 cups cheddar cheese
1/2 red bell pepper
1/2 onion (red or regular)
1/2 cup cilantro
2-3 green onions, chopped
1/4 cup black olives (optional)
Sour cream, guacamole (see my recipe), or salsa to dip!
Preheat oven to 400 degrees.
Layer chips on large cookie or baking sheet covered in foil.
Sprinkle bell pepper & onions over chips and cook in preheated oven for 10-12 minutes or until bell pepper & onions look soft and slightly golden.
Take out nachos and add chicken or carne asada, green onions, &/or olives. Sprinkle cheese generously over top of everything. Cook for 5 more minutes or until cheese is melted. Toss cilantro over the top when nachos are done cooking and enjoy!
NOTE: In this recipe, the measurements are not really that important. Add or take away as much as looks good to you! Sometimes we leave out the meat if we don't have any that is cooked already. Left over chicken works great for these nachos!
