Mini Salami Pizzas
Prep Time: 5 minutes
Bake Time: 10 minutes
Serves: 2 people
1 package Udi's gluten-free pizza crust (pre baked, comes with 2 rounds)
1 cup thinly sliced genoa salami or summer sausage
1 cup grated mozzarella cheese
1/4 cup onion, diced
4 tablespoons pesto or red pizza sauce
1 cup fresh baby spinach
1/4 cup artichoke hearts, drained and chopped roughly
Black pepper
Preheat oven to 400 degrees.
Line a baking sheet with foil. Place pizza crust on top of foil on baking sheet.
Spoon pesto or pizza sauce onto each crust. Sprinkle mozzarella cheese onto each crust, evenly dividing. Sprinkle onions on top of cheese. Place salami or sausage onto each crust. Layer spinach onto each crust. Add artichoke hearts to just one crust or both. Sprinkle black pepper over each crust.
Bake in preheated oven for 10 minutes or until cheese melts and crust starts getting crispy. Cut with a pizza slicer and enjoy!
