Mini Meatloaves
Serves: 2-4 (unless you have my husband, then you want to double it)
Prep Time: 10 minutes
Cooking Time: 30-35 minutes
1 pound ground beef (preferably organic & grass fed)
1/3 cup onions, diced
1/3 cup plain bread crumbs
1/2 package dry onion soup mix
1/3 cup ketchup
1 egg
2 cloves garlic, minced
Additional 1/3 cup ketchup, set aside
2 tablespoons brown sugar
1 teaspoon ground mustard
Preheat oven to 350 degrees. Line a large baking tray with aluminum foil. In a large ziploc bag add ground beef, onions, bread crumbs, ketchup, egg, garlic, and dry onion soup mix. Seal tightly and mix it and squish it all up until well combined. Form ground beef mixture into large square on a cutting board and form into 6 loaves as shown below. Place loaves onto prepared baking sheet.

Bake uncovered in the preheated oven for 30-35 minutes or until all pink is gone from the center of each meatloaf.
While cooking, you can make the ketchup glaze: in small/medium bowl add additional ketchup, brown sugar, and ground mustard. Stir to combine and spoon over the top of each meatloaf when they have 10 minutes left to cook. (Spoon any excess fat off of meatloaf before adding glaze). Once done, allow to cool for 5-10 minutes. Enjoy!
