Mediterranean Style Focaccia Sandwiches
Serves: 4

Cook time: 8 minutes
4 Focaccia Rolls (sandwich size, not full length)
1-2 cups cooked chicken, cut in slices**see below**
3-4 tablespoons mayonnaise
3-4 tablespoons pesto
3-4 tablespoons crumbled feta cheese w/ mediterranean herbs
1/2 zucchini, sliced
1/4 yellow squash, sliced
1/2 red bell pepper, sliced
1/2 cup red onion, sliced thinly
1 tablespoon extra virgin olive oil
Heat olive oil in large pan over medium heat. Add zucchini, squash, bell pepper, & onion, and cook until soft - 5-6 minutes. Slice focaccia bread in half and spread mayo thinly on both slices, then spread pesto thinly over mayo. Fill bread with sautéed veggies & chicken. Sprinkle feta cheese over top. Slice in half & enjoy!
**I used a pre-cooked rotisserie chicken purchased from Fred Meyer in these sandwiches, and it was absolutely perfect. Then, the next day I used the leftover chicken in salads & chicken noodle soup.
**I also had some greek style seasoning in my cupboard that I sprinkled lightly over the veggies while they were sautéing.
