Mango Chicken Salad

Mango Chicken Salad

Serves: 2
Prep time: 10-15 minutes

1/2 head romaine, rinsed & chopped
2 cups baby spinach, stems removed
1 ripe mango, cut into chunks
1 cup cooked chicken, cut in small pieces
2 celery stalks, chopped in small pieces
1/2 avocado, cut in chunks
10-12 cherry tomatoes, cut in half
1/2 cup cucumber, cut into wedges
2 tablespoons feta cheese
Fresh ground pepper, to taste
Purchased raspberry vinaigrette or poppyseed dressing

Arrange salad greens onto 2 large dinner plates.  Add mango, chicken, celery, avocado, cherry tomatoes, & cucumber over top of salad greens.  Sprinkle feta cheese over the top, and grind fresh black pepper over top.  Pour raspberry vinaigrette over everything, and enjoy!
