1 pound spiral pasta
2 1/2 cups half n half
1 block (8oz) cream cheese, cut into medium chunks
1 cup sharp white cheddar cheese, shredded
2 cups gruyere cheese, shredded
1 cup medium cheddar cheese, shredded
1 cup plain panko bread crumbs
1/8 teaspoon cayenne pepper
Salt/black pepper, to taste
Preheat oven to 425 degrees.
Cook pasta according to package directions. Reserve 1 cup of the pasta water (set aside), then drain pasta. Set pasta aside.
Heat half n half, cayenne, and a good pinch of black pepper in large saucepan over medium heat until reduced, stirring frequently. (You want to reduce it by about half; takes about 15 minutes).
Add cream cheese into half n half and stir until completely melted. Add all cheeses and stir until melted and creamy.
Add noodles into cheese sauce and stir well. Add a good pinch of salt to taste. Add more salt & black pepper if needed. Add reserved pasta water into noodle mixture and stir well. (It may look a little soupy, but will thicken while it bakes.)
Add pasta mixture to a large greased baking dish. Sprinkle bread crumbs all over the top.
Bake uncovered in preheated oven for 35-40 minutes or until cheese is thick and bubbly.
Turn oven to broil setting and broil 5-10 minutes or until the top is slightly crispy brown.
