Lettuce Wraps

Lettuce Wraps

Serves: 2-3 people
Prep Time: 10-15 minutes
Cook Time: 10 minutes

1 head living butter lettuce
1 pound ground beef (organic & grass fed if possible)
1/2 onion, minced
1/2 red bell pepper, diced
1 cup Trader Joe's sweet chili sauce (or another brand if you must, but this one is best!)
1 large carrot, peeled & shredded
2-3 bunches green onions, chopped
1/4 teaspoon garlic powder
Handful of fresh cilantro, roughly chopped
Salt & Pepper, to taste

Rinse whole lettuce leaves and pat dry softly, careful not to tear them.  Set aside on serving plates.

Sauté ground beef in large frying pan over medium-high heat until almost cooked through. Add onion and bell pepper, cooking until soft, about 5-8 minutes. Add green onions to mixture, stir well.  Sprinkle garlic powder, salt, & pepper to taste over beef mixture; stir. Add 2-4 tablespoons sweet chili sauce to beef mixture; stir. 

Carefully spoon meat into each lettuce leaf. Sprinkle shredded carrot & cilantro over top of each. Drizzle a tablespoon of sweet chili sauce over top of beef in each lettuce wrap and serve immediately. 
To eat: wrap lettuce around beef like a burrito. Enjoy!!!!

NOTE: I found living butter lettuce initially at Metropolitan Market: $4.99 for 1 head, then I found at Costco: $2.99 for 2 heads.....Just so ya know....
