Kielbasa Sausage w/ Peppers
Serves: 3-4 people
Prep Time: 10 minutes
Cook Time: 25 minutes
Equipment needed: large frying pan & steamer (I just use a colander over pot w/lid that fits since I don't have an actual steamer.....improvise!!)
1 1/2 cups fully cooked turkey kielbasa sausage, sliced
1 onion, sliced into thin wedges
1 red bell pepper, thinly sliced
1 green bell pepper, thinly sliced
5 baby red potatoes, thinly sliced
2 tablespoons extra virgin olive oil
1-2 tablespoons parmesan cheese, grated
1 tablespoon of your favorite everyday seasoning (Johnny's, Mrs. Dash, etc.)
Salt/Pepper to taste
Pour 2 cups of water into bottom of steamer or pot w/ colander over it over high heat. Add baby red potatoes and steam just until tender, about 8-10 minutes.
Meanwhile, heat olive oil in large frying pan over medium-high heat. Throw onions & peppers into frying pan and cook until they get a nice golden color to them, about 6-8 minutes.
Add sausage into onion & pepper mixture and stir together, warming through, about 5 more minutes. Add your favorite seasoning along with a bit of salt & pepper to taste. Once sausage is heated through, gently fold in cooked baby red potatoes and stir gently. Sprinkle parmesan over top and serve!
