Jalapeño Popper Dip

Serves: Small/Medium size party
Prep Time: 10-15 minutes
2 8 ounce packages cream cheese
1/2 cup mayonnaise
1/2 cup sour cream
1/2 cup finely shredded mexican cheese
6-8 fresh jalapeños, minced with seeds left in
Additional 1-4 tablespoons cheese for sprinkling
1 box Ritz crackers
Using a kitchen-aide (or by hand, but it it way harder) combine cream cheese, mayo, and sour cream, blending until smooth. Add cheese and jalapeños, mix well. Transfer to serving bowl. Sprinkle cheese over top. Refrigerate until ready to use and serve with Ritz crackers. Enjoy!
*Sometimes I make it the day before and refrigerate it overnight. It keeps perfectly and the flavors have time to meld together. Careful! This dip is addicting!
