1 pound ground pork
2 teaspoons garlic powder
1 tablespoon Italian seasoning
Salt/Pepper, to taste
2 stalks celery, finely diced
1 onion, finely diced
1 carrot, peeled and finely diced
4 medium-large fresh zucchini or yellow squash, cut in half lengthwise and insides scooped out
15 ounces tomato sauce (optional-omit if nightshade free)
1 teaspoon raw honey (omit if nightshade free)
Preheat oven to 400 degrees.
In large frying pan, cook ground pork, celery, onion, and carrot over medium-high heat until pork is no longer pink, 5-8 minutes. Add garlic powder, Italian seasoning, and a generous dash of salt and pepper. If using tomato sauce, add to mixture along with raw honey and stir well. Remove from heat and set aside.

Spray large glass baking dish with olive oil nonstick spray. Add zucchini as shown in picture.
Spoon pork/tomato mixture over top of layered zucchini.
Bake uncovered in preheated oven for 25-30 minutes or until zucchini is tender when fork goes through it.
Allow to cool 10 minutes before serving.

Note from Gabbi: The reason I made this dish two ways is because my husband can eat tomatoes and I cannot. I thought he would appreciate the sauce versus plain. As you see below, here are the two ways this dish can be made. I combined them both into one dish to save time and dishes.
I removed half the pork mixture first before adding the tomato sauce, added to zucchini, then poured the tomato sauce over remaining pork mixture for my husband. If you scroll back up to the top, you can see my half n half creation. You can create this recipe any way you choose. You can do all without tomato, all with, or half n half like I did.
I also bought pre-seasoned gluten free ground sausage from Whole Foods and omitted the garlic powder, salt, and pepper.
