Grilled Zucchini with Garlic Herb Butter
Serves: 2-3 people
Prep Time: 5 minutes
Grill Time: 8-10 minutes
2 medium zucchini, rinsed whole
3 tablespoons room temperature butter (soft)
1 clove garlic, minced
1 tablespoon fresh parsley, minced
1 teaspoon grated parmesan cheese
4-5 tablespoons shredded parmesan cheese blend (asiago, fontina, mozzarella, etc.)
Dash Salt/Pepper
Heat grill to medium heat. Chop ends off each zucchini. Cut in half lengthwise. Using spoon, scoop small layer out of each zucchini, just enough to create small dent; discard what you scoop out. Set aside.
In a small bowl combine butter, garlic, parsley, grated parmesan cheese, and dash of salt & pepper. Mix well until butter is smooth. Spread butter evenly onto each zucchini. Sprinkle shredded parmesan cheese blend on top of each zucchini. Grill 8-10 minutes on tray or foil or until fork goes through thickest part easily & cheese is melted. Serve immediately.
