Grilled Beer Brats
Serves 4
Prep time: 15 minutes
Boil time: 10 minutes
Grill time: 5 minutes
4 bratwurst
1 Tallboy or Coors Light
6-10 cups water
1 1/2 onions, sliced in rings
2 tablespoons brown sugar
2 tablespoons butter
1 tomato, sliced into thin wedges
8 tablespoons cream cheese, softened slightly
4 hoagie style rolls
BBQ, ketchup, or mustard (optional)
Pour beer into medium-large pot. Add enough water to completely cover brats. Put on high heat and bring to a boil. Once it comes to a boil, add the bratwurst into pot. Boil for 10 minutes, keeping a close watch so it does not overflow.
Meanwhile, melt butter over medium heat in saucepan. Add onions and sauté for 3-4 minutes. Add brown sugar and cook until onions are soft and have a rich, blackened brown color. Take off heat, cover, and set aside.
Heat grill to medium-low heat. Take brats out of boiling water and transfer to grill, grilling just until outside begins to darken, 5-6 minutes.
Once brats are done, spread cream cheese onto hoagie rolls, add 3-4 tomato wedges, place brats in bun, and finish with the caramelized onions spooned on top, as shown in the picture above. YUM!
NOTE: Be careful grilling the brats, as they are full of beer, and sometimes spit!
