Makes: 24 cookies
Prep Time: 10 minutes
Bake Time: 9 minutes per batch
1 1/2 cups Namaste Gluten Free Organic Perfect Flour Blend
3/4 teaspoon baking powder
1/2 teaspoon baking soda
1 1/2 teaspoons ground cinnamon
Pinch of Salt
1/2 cup coconut oil, softened
1/2 cup brown sugar
1/2 cup white sugar
1 egg
1 1/2 teaspoons vanilla extract
Preheat oven to 350 degrees. Grease 2 cookie sheets.
In a medium size bowl, combine flour, baking powder, baking soda, cinnamon, and pinch of salt. Set aside.
In a kitchen-aide, mix coconut oil, brown sugar, and white sugar together using whisk blade until well combined with no lumps. Add egg and vanilla extract, mix well.
Switch to dough blade and slowly add dry ingredients until well combined. ( I usually turn it to a few speeds faster just for a few seconds to mix it well).
Using your hands, form/roll heaping tablespoon sized dough balls onto greased cookie sheet, 4 to a row.
Bake for 9 minutes in preheated oven. Remove and let cool 10-15 minutes.
Note from Gabbi: Cookies will continue cooking after you remove them from the oven, so even if they do not look ready, TAKE THEM OUT and let them sit!!! This will ensure a soft, chewy cookie. I cannot stress this enough. :) See below for the flour blend I used - it is my current favorite and I purchased it at Costco.
