French Dip Sandwiches
Serves: 4
Prep time: 5 minutes
Cook time: 10-20 minutes
4 french hoagie-style bread rolls, split
4-6 tablespoons mayonnaise
12 ounces deli roast beef, pre-sliced
1 onion, sliced into thin rings
2 tablespoons extra virgin olive oil
2 cups water
3-4 teaspoons organic, low-sodium beef base
1/4 teaspoon black pepper
1/2 teaspoon dried oregano
1/4 teaspoon dried marjoram
In small/medium saucepan, heat water, bringing to a boil. Add bouillon paste, whisking until smooth. Reduce to low heat. Add pepper, oregano, and marjoram to broth, stir. Add roast beef slices to broth and simmer for 5- 10 minutes, or until beef is heated through.
Heat olive oil over medium/high heat. Add onion rings and cook until onions are browned and soft, about 7-10 minutes, stirring frequently. Remove from heat when done.
Toast rolls for 1-2 minutes under broiler. Add desired amount of mayonnaise to each bread slice. Remove roast beef from liquid and place on rolls. Add onions directly on top of beef. Divide broth between 4 small bowls for dipping sandwiches. Serve immediately.
TIP: Try serving with a fresh green salad or a nice veggie & dip tray.
