Fix & Forget it Chicken & Rice Burritos

Prep Time: 5 minutes
Slow Cooker Time: 6-7 Hours
Serves: 4-6
2 cups brown rice
4 cups water
3 cloves garlic, minced
1/2 onion, diced
2 stalks celery, diced
8-10 frozen chicken tenders
12 ounces enchilada sauce
1 heaping teaspoon chili powder
1/2 teaspoon ground cumin
Salt/Pepper
Flour Tortillas
Mexican or pepper jack cheese, to top
1 cup fresh cilantro, chopped
Hot sauce, salsa, sour cream or ranch, to top
Spray inside of large crockpot with nonstick spray. Rinse rice in strainer with cold water, then add to bottom of crockpot. Add water to crockpot. Place chicken tenders in crockpot. Add garlic, onion, & celery, chili powder, cumin, a good dash of salt and pepper, and then pour enchilada sauce over everything. Cook on low for 6-7 hours or until rice has soaked up all liquid and is soft and fluffy, and the chicken melts apart.
Warm tortillas then fill 'em up with rice and chicken, and any topping you would like! Salsa, sour cream, ranch, cilantro, and cheese!! YUM! Enjoy!
*Note: This dish will look pretty soupy and not so delicious when you first throw everything in the crockpot. But the rice will cook and soak it up and it is delicious! Trust me! This is a great family dish because it feeds a lot and it cooks on its own!
I stirred it one time about an hour after I threw it together, then left it the rest of the day.
