Espresso Brownies
Makes: 12 brownie squares
Prep Time: 20 minutes
Bake Time: 35-40 minutes
1 box Ghirardelli Double Chocolate Brownie Mix
1/3 cup coconut oil
1/4 cup strong espresso
1 egg
Preheat oven to 325 degrees.
Grease 8x8 glass baking dish with cold butter.
Melt coconut oil over medium heat, then pour into small bowl and cool 10 minutes. Make espresso with machine or moka pot on the stove. Pour into measuring cup and cool 10 minutes.
Whisk egg into large bowl. Add cooled coconut oil & espresso to egg, mix well. Add brownie mix, stir really well using wooden spoon. Pour into greased pan and bake in preheated oven 35-40 minutes or JUST until knife comes out clean. Do not over bake I beg you!!!
Cool for 1 hour before slicing into squares.
Enjoy!!
Tips: Make sure your oven is nice and hot before putting them in to bake.
These are great on their own, but would also be amazing served warm with vanilla ice cream or whip cream! Oh my gosh yum.
