Crushed Candy Cane M&M Christmas Cookies
Makes 2-3 dozen cookies (quite a bit!)
Prep Time: 15 minutes
Bake Time: 8-10 minutes per batch
3 cups all purpose flour
1/2 teaspoon salt
3/4 teaspoon baking soda
1 cup unsalted butter, at room temperature
1 cup light brown sugar
1/2 cup granulated white sugar
2 eggs
1 tablespoon vanilla extract
1 cup white chocolate chips
4 regular size candy canes, crushed
1 cup mini (baking bits size) M&M's
Preheat oven to 350 degrees. (You want it nice and hot). Grease a baking sheet with cooking spray.
Combine flour, salt, & baking soda in a bowl and set aside.
Using a kitchen aide with the paddle attachment, mix butter and sugar until well combined. Add eggs and vanilla, beat until smooth. Slowly add in flour mixture. Slowly add in white chocolate chips, crushed candy canes, and M&M's, just until combined.
Drop heaping tablespoons of dough onto baking sheet about 2 inches apart. (I like to pat together firmly into a little ball). Bake 8-10 minutes or until cookies are slightly golden but still soft. Let cookies cool on baking sheet for 3-4 minutes.
Transfer cookies to a wire rack or plate to cool completely. Repeat. Enjoy!!!
*The candy canes do melt a little bit in the oven making it a little hard to get some of the cookies off the baking sheet. I just let them cool on the baking sheet 1-2 minutes longer if they felt like they were going to break, and that helped keep them in one piece.
Another tip: You want to make sure your oven is preheated nice and hot. I had mine going 15-20 minutes before putting them in.
