Crockpot Tacos
Serves: 2
Prep time: 5 minutes
Cook time: 4-6 Hours on Low Setting
Equipment needed: crockpot
7-10 boneless, skinless, frozen chicken tenders
1/2 cup chicken broth
1 packet of your favorite taco seasoning
1/2 onion, diced very small
1-2 jalapeños or 1 Serrano chile pepper, minced
Drizzle extra virgin olive oil
Extras: (use whatever you like!)
Flour or corn tortillas
Sour Cream, Greek yogurt, or ranch dressing
Cheddar Cheese
Guacamole
Cilantro
Salsa, Pico de Gallo, and/or hot sauce
Black olives
Shredded Lettuce
Spray bottom and sides of crockpot with nonstick spray. Layer chicken tenders in the bottom. Place onion, jalapeños or Serrano pepper over top of chicken. Pour chicken broth over and add taco seasoning packet. Drizzle small amount of olive oil over everything.
Cook on low setting for 4-6 hours or until chicken falls apart at the touch. Drain any liquid from crockpot and shred chicken using two forks. Build your tacos and enjoy!
Note: You can also make a taco bowl and serve with tortilla chips, or use on nachos!
