Makes: 10-12 cookies

Bake Time: 8-10 minutes
2 eggs, beaten
2 tablespoons organic virgin coconut oil, melted & cooled
2 tablespoons maple syrup
1/2 teaspoon vanilla extract
2 heaping tablespoons unsweetened cocoa powder
1 heaping tablespoon coconut flour, sifted
1 cup shredded or shaved unsweetened coconut
Additional 1/4 cup coconut, for sprinkling
1/8 teaspoon baking soda
Preheat oven to 350 degrees.
Spray baking sheet with coconut oil spray or grease with grass-fed butter.
Mix eggs, cooled coconut oil, maple syrup, and vanilla. Add in cocoa powder, coconut flour, unsweetened coconut, and baking soda. Mix well.
Using a tablespoon, drop onto greased baking sheet and flatten slightly. Sprinkle small amount of coconut over the top of each cookie. Bake 8-10 minutes or until coconut on top is slightly browned.
Remove from oven and allow to cool for 10-15 minutes.
