Chewy Chocolate Brownie Cookies

Makes: 2 dozen
*Gluten-Free

3 cups powdered sugar
3/4 cup unsweetened cocoa powder
1 teaspoon salt
2 egg whites
1 egg
4 ounces semi-sweet baking chocolate, chopped roughly

Preheat oven to 350 degrees.
Line 2 baking sheets with aluminum foil and spray with nonstick spray.

Using a kitchen aide with the dough blade (or by hand), combine powdered sugar, cocoa powder, salt, egg whites, and egg; combining well. Fold in chocolate chunks. Dough will be very thick and hard to stir.

Using a tablespoon (and your finger), spoon batter onto baking sheets 2 inches apart, 4 to a row and 12 to a sheet.  (Don't press down on the cookies, just leave 'em in clumps).

Put both baking sheets in the oven at once, one on the lower rack, one on the top rack. Bake 7 minutes then rotate the cookie sheets. Bake 7 more minutes or until cookies are puffed and crackled.

Remove from oven and cool for 5 minutes. Transfer cookies to plate and enjoy! 

They are best right from the oven, but pretty dang good the next day too.
