Breakfast/Post Workout Smoothie
Servings: 2
Prep Time: 5 minutes
2 cups frozen mixed berries
1 1/2 cups unsweetened coconut milk
Splash orange juice
Splash coconut water
2 tablespoons chia seeds
Handful fresh baby kale or baby spinach
1 banana, fresh or frozen (over-ripe)
1-2 tablespoons raw honey
Combine all ingredients listed above into blender. Blend until mixed very well, adding more coconut water if too thick, until smooth and creamy. Pour into cups and enjoy!
NOTE: I make this particular smoothie almost every day for my husband and myself. A great breakfast on the go that fills you up with good things! Sometimes I use mango chunks instead or some other kind of frozen fruit. You can barely taste the spinach or kale if blended well. My favorite/recommended blender is the Ninja. I have heard excellent things about the Vita-mix blender as well.....
