1 pound organic grass fed ground beef
1/2 can refried beans
1/2 cup onion, diced
1 tablespoon creole seasoning
1/2 teaspoon ground cumin
1/2 cup sour cream
2 cups cheddar cheese, shredded
5 large flour tortillas
Toppings:
Salsa
Sour Cream
Guacamole (optional)
Fresh Cilantro
Preheat oven to 400 degrees. Grease large glass baking dish, set aside.
Cook ground beef over high heat in large frying pan until done and no longer pink, 8-10 minutes. Add onions, creole seasoning, and ground cumin; sauté with beef over medium heat until onions are soft, 6-8 minutes.
Remove from heat and mix in 1/2 cup sour cream, stirring well.
Spread spoonful of refried beans onto each tortilla then spoon beef mixture on top. (about 1/2 cup or so of beef on each tortilla). Sprinkle with cheese, then wrap tightly and place into greased baking dish. Continue until all tortillas are rolled, then sprinkle with cheese.
Cover with aluminum foil and bake 40 minutes or until hot and bubbly.
When ready to serve, top with sour cream, salsa, guacomole, and cilantro.
