Basic Chicken Fajitas

Basic Chicken Fajitas

Serves: 2 plus a little extra
Prep time: 10 minutes
Cook time: 12-15 minutes

1 pound boneless, skinless chicken tenders, thawed
1 large bell pepper, cut in thin strips
3/4 onion, cut into chunks
1 packet fajita seasoning
2 tablespoons canola or olive oil
Shredded Cheese
Sour cream
4 corn tortillas

Heat 1 tablespoon oil in large pan over medium heat.  Add chicken and cook 3 minutes on each side.  

Transfer chicken to cutting board. Cut into thin strips.  ( chicken should still be pink on inside).

Add 1 more tablespoon oil into pan and add bell pepper & onion.  Add chicken, fajita seasoning, & 4 tablespoons water.

Cook over medium heat for 5-6 minutes more, or until bell pepper & onion look soft. Fill tortillas with sour cream & cheese and enjoy! 

NOTE: I always wrap tortillas in foil and warm in 350 oven for 5 minutes.
