Banana Bread

Banana Bread

Serves: 6-8 ( makes 1 loaf)
Prep time: 15-20 minutes
Bake time: 45-60 minutes

2 cups all purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
2 eggs, beaten
6 over-ripe bananas, mashed
1/2 cup brown sugar
1/3 cup organic blue agave or honey
1/2 cup cooking oil
Additional 1-2 tablespoons brown sugar for sprinkling

Preheat oven to 350 degrees. Lightly grease a 9x5x3 loaf pan with cooking spray and set aside.  
In a large bowl combine flour, baking powder, baking soda, salt, cinnamon, & nutmeg.  Make a small well in center and set aside.
In medium bowl combine eggs, banana, brown sugar, agave nectar, & oil.  Add this mixture to flour mixture and stir gently just until moistened. Batter should be a bit lumpy.  Spoon into greased loaf pan, sprinkle additional brown sugar all over top.  Bake for 45-55 minutes or until toothpick comes out clean.  I usually cover bread with foil the last 15-20 minutes. Cool 10-15 minutes before serving.

Notes from the cook:  I chose to use organic blue agave in this recipe, and you can't even taste a difference, and it is so much better for you.  Banana bread recipes always have so much sugar in them! Agave nectar is even better for you than honey. A natural sweetener extracted from the agave plant;  it is a low glycemic sweetener that slowly absorbs into the body, preventing spikes in blood sugar.  
3 parts agave = 4 parts sugar.
