Baked Potatoes with Sausage Gravy
Prep Time: 10 minutes
Bake time: (Potatoes) 1 hour
(Gravy) 10 minutes
(Sausage) 10 minutes
Serves: 3-4 people
4 medium sized russet potatoes, scrubbed clean
1 pound ground mild Italian sausage
1/3 cup butter
1/2 onion, minced
1/3 cup all purpose flour or brown rice flour
1 3/4 cups chicken broth
2/3 cup milk
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon garlic powder
Shredded cheddar cheese, for sprinkling
Preheat oven to 350 degrees. Prick potatoes several times with a fork, then wrap tightly in foil. Bake 1 hour or until completely soft and cooked through.
When potatoes are done, set aside to keep warm in foil, and make gravy:
In a saucepan over medium heat, add butter until melted then add onions. Cook onions in butter until soft, 5-6 minutes. Whisk in hand, add flour to saucepan, stir a little. Add chicken broth slowly with one hand, whisking in the other to smooth out all lumps. Add milk slowly, still whisking. Add salt, black pepper, and garlic powder. Stir. Let gravy thicken, stirring every once in a while, about 10 minutes. If it gets too thick, add a little chicken broth to thin it out.
In medium frying pan over high heat, cook sausage until completely done, about 10 minutes. Once done, drain and add to gravy. Stir well.
When ready to serve, cut open potatoes and spoon gravy over the top. Sprinkle some cheese over the top and enjoy!
Note from the cook: Serve with a nice green salad and some corn, and you've got a meal!
