Baked Lemon Rosemary Chicken with Mustard Glaze
Serves: 2-3 people
Prep Time: 10 minutes
Bake Time: 40 minutes
3 tablespoons extra virgin olive oil
1/2 red onion, roughly chopped
2 cloves garlic, minced
3 chicken breasts, thawed
1 tablespoon fresh rosemary, minced
3 teaspoons chicken rub seasoning
Glaze:
Juice from 1/2 lemon
1 tablespoon dijon mustard
2 tablespoons chicken base
1 teaspoon ground mustard
Pepper, to taste
3 thin slices of lemon
Preheat oven to 400 degrees.
In a small bowl, combine glaze ingredients: Lemon, dijon mustard, chicken base, ground mustard, and a pinch of pepper. Stir until smooth, set aside.
Heat olive oil in a dutch oven over medium-high heat. Add garlic and onions, brown 2-3 minutes. Sprinkle chicken rub all over each chicken breast (1 teaspoon per breast), and gently massage into chicken using your fingers. Place chicken in pan with garlic and onions. Brown 1 minute on each side, then remove dutch oven from heat entirely.
Sprinkle rosemary over top of chicken. Pour glaze evenly over each breast. Place 1 lemon slice on top of each. Cover with lid and bake in preheated oven for 30 minutes, or until chicken is no longer pink. Remove lid and bake another 10 minutes uncovered.

*Goes great with a green salad, mashed potatoes, green beans, or any type of vegetable. It has really great flavor, so pair it with something simple and not too overpowering.
