Baked Chicken with Creamy Mushroom Sauce

Serves: 2-3 people
Prep Time: 5 minutes
Bake Time: 30 minutes
3 boneless, skinless chicken breasts, thawed
3 teaspoons chicken rub
1/3 cup flour
Additional 3 tablespoons flour
5 tablespoons butter
1/2 cup onions, finely diced
1 clove garlic, minced
2 cups fresh mushrooms, sliced
1/2 cup chicken broth
1 cup heavy cream
2 tablespoons fresh parsley, roughly chopped
Salt/Pepper, to taste
Preheat oven to 350 degrees. Grease a glass baking dish.
Lightly sprinkle chicken rub on each chicken breast, massaging lightly. Pour 1/3 cup flour into shallow dish. Coat both sides of chicken in flour, shake lightly.
In a large skillet/pan, heat 2 tablespoons butter over medium-high heat. Brown chicken 1 minute on each side, then transfer to greased baking dish.
Add remaining 3 tablespoons butter to same skillet/pan. Add onions and garlic, cooking 1-2 minutes. Add mushrooms and cook until golden brown, 5-6 minutes.
Sprinkle 3 tablespoons flour over mushrooms. Slowly whisk in chicken broth and cream, stirring to smooth out any flour lumps. Add a little salt and pepper (more pepper than salt) and stir.
Pour mushroom cream sauce over chicken in baking dish. Cover with foil and bake in preheated oven for 30 minutes or until chicken is fully cooked. Remove foil and switch to broil setting. Broil uncovered 1-2 minutes or until golden brown.
Sprinkle fresh parsley over the top just before serving along with another sprinkling of pepper.
