Asian Chicken Salad
Serves: 2 (this is considered a meal, not a side)
Prep Time: 35 minutes (includes marinating)
Cook Time: (chicken) 10-12 minutes
1 head romaine, chopped
1/2 cup sliced water chestnuts, drained
1/2 bunch green onions, sliced
1/2 cup mandarin oranges, thinly sliced
2 tablespoons thinly sliced almonds
1 cup chow mein noodles
1 tablespoon sesame seeds
6 boneless, skinless chicken tenders, thawed
1 cup teriyaki sauce
Purchased Asian-Style Dressing
Marinate chicken for 30 minutes in teriyaki sauce.
Meanwhile, arrange lettuce onto 2 plates. Split water chestnuts, green onions, mandarin oranges, almonds, and sesame seeds in half and arrange over lettuce.
Turn oven on Broil. Line baking sheet with foil; place chicken on sheet and broil 5-6 minutes on each side, or until chicken is no longer pink inside. When done, remove from oven and slice into thin strips.
Lay chicken on top of lettuce and sprinkle chow mein noodles on top. Drizzle asian-style dressing over top and enjoy!
