Apple-Pear Crumble
Serves: 1-6 people
Prep Time: 25-30 minutes
Bake Time: 45-60 minutes
1 frozen pie crust, thawed (just 1, not 2)
3 LARGE or 5 SMALL fuji or honey-crisp apples, peeled, cored, & cut into thin wedges
3 firm but ripe pears, peeled, cored, & cut into wedges (thicker than the apples)
1 cup rolled oats
3/4 cup brown sugar
1/2 cup all purpose flour
1/2 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1 tablespoon unsweetened shredded coconut
2 tablespoons fresh lemon juice
1 tablespoon maple syrup
1 stick cold, unsalted butter, cut into small chunks
Vanilla ice cream, to serve with
Preheat oven to 375 degrees. Lightly coat pie dish with nonstick spray. Place pie crust on bottom of pie dish, and mold into dish and up sides. Set aside.
Toss apples and pears together gently. Stir fresh lemon juice into mixture and spoon into pie dish. Drizzle maple syrup over apples and pears.
Mix oats, brown sugar, flour, cinnamon, nutmeg, and coconut together. Using your hands, mix cold butter in until mixture is crumbly. Sprinkle over top of apples and pears. Bake for 45-60 minutes, or until crust is golden brown on bottom and fork goes through apples easily. Let cool 10-15 minutes. Serve with vanilla ice cream.
